When you’re busy with work, family, church and all the other stuff of life, it’s really hard to maintain a healthy balance of diet and exercise. When you rush home and have a list of projects waiting for you (like yard work), and you want to fix a quick but healthy supper, try this delicious recipe!  It’s easy on the Weight Watcher plan too! Add some grilled chicken and a salad and you’re done!

 

Balsamic and Parmesan Roasted Cauliflower

Nutritional Info (Per serving – makes 4 servings):

Calories: 149, Total Fat: 10g, Carbs: 10g, Dietary Fiber: 4g, Protein: 7g

Ingredients

1 head cauliflower/florets (8 cups 1-inch-thick slices)

2 tablespoon extra-virgin olive oil

1 teaspoon marjoram, dried

1/4 teaspoon salt

pepper, to taste

2 tablespoon balsamic vinegar

1/2 cup(s) Parmesan cheese, shredded or grated

Preparation

1. Preheat oven to 450°F
2. In large bowl, toss cauliflower, oil, marjoram, salt and pepper. Roast on a large rimmed baking sheet until starting to soften and brown on the bottom, about 20 minutes.

3. Remove from oven, toss the cauliflower with vinegar and sprinkle with cheese. Return to the oven and roast until the cheese is melted and any moisture has evaporated, 5 to 10 minutes more.
