Favorite Thanksgiving Recipe

Thanksgiving is a time to reflect on all we are thankful for and to spend time with our loved ones. However, it’s also a time to share really great food. Many families gather around the table and enjoy all kinds of delicious foods. However, we all have our favorite recipes. Some may love turkey prepared a certain way, while others may love a particular type of stuffing or, perhaps, it’s grandma’s homemade rolls. Each of us have different tastes and that’s OK. What’s most important is we gather to give thanks.

Anyway, all that know me know I love all kinds of food. Yet one of my all-time favorite Thanksgiving dishes is “Acorn Squash Casserole.” This is probably because it tastes more like dessert.

So, I thought I would share the recipe. Hopefully, you and your family will enjoy it as much as we have over the years. It has certainly been one of our favorites.

“Acorn Squash Casserole”

2 cups acorn squash, cooked & pureed                                  ¼ tsp salt

1 cup milk                                                                                ¼ tsp baking soda

1 cup sugar                                                                              1 tsp vanilla

½ cup flour                                                                              ½ stick butter, melted

2 eggs                                                                                      cinnamon

Instructions

Combine wet ingredients. Combine dry ingredients. Mix both together. Pour melted butter onto bottom of casserole dish, then pour in mixture. Sprinkle with cinnamon. Bake at 450° for 30 minutes.

Happy Thanksgiving everyone!
