‘Tis the Season to be Baking
Christmas is just six days away. Last-minute shopping is underway — along with stocking up on groceries for the perfect family dinner. There is so much I still need to do! I’m not much into the Christmas spirit this year, but I’m trying. And one thing I plan to do this week is make a batch of Christmas cookies. Not just any cookies, though, but “homemade” ones with sprinkles in them!
If you’ve read any of my previous recipe blogs, you know I’m always taking the easy way out, especially when it comes to baking. I always buy the premade cookie mix or the kind that’s in a tube in the refrigerator section of the store, where you literally just cut it up and put it on a cookie sheet. But this time, I’m getting fancy.
The following is a recipe I found online that I plan to make this week. They are called Christmas Chocolate Chip Cookies.
What you need:
- 1 stick salted butter
- 1/2 cup light brown sugar
- 1/4 cup white sugar
- 1 large egg
- 2 tsp vanilla
- 1 2/3 cups all-purpose white flour
- 1 tsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup mini semi-sweet chocolate chips
- 1/2 cup white chocolate chips
- 1/4 cup red, green, and white mixed Christmas sprinkles
How to prepare:
Preheat your oven to 350 degrees. In a small bowl, combine flour, cinnamon, baking soda, and salt. Stir together well with a fork. In a large mixing bowl, add melted butter, brown sugar, and white sugar. Mix well, then add in the egg. Mix well again, then add in the vanilla. Once all of that is combined, add in the flour mixture.
Now it’s time to add in your chocolate chips and sprinkles. After that, use a spoon to evenly scoop out the mix on to a cookie sheet. Bake the cookies for 11 minutes, remove them from the oven, and keep them on the cookie sheet for at least 10 minutes to finish baking. Then, move them to a cooling rack. The cookies are meant to be super soft and gooey!
I’m looking forward to trying them. I’m not making any promises they’ll last until Christmas morning, though!
