Icing Makes the Cake

Although cookies are my favorite dessert, I do like an occasional piece of cake. However, not just any cake. I love cake with wedding cake frosting. There’s something about the crispy edges that really works for me. I actually crave this icing from time-to-time and have been known to dip my cookies in it. There’s nothing like the best of both worlds! If you are like me and love icing with a little bit of crispiness, please follow the recipe below.

You will need the following ingredients:

  • 1 cup (2 sticks) room temperature, unsalted butter
  • 4-5 cups confectioners’ sugar
  • ¼ cup heavy cream or whole milk
  • 1 teaspoon pure vanilla extract (or if you’re feeling adventurous, try almond extract)

A little salt to bring out the flavors and cut down on the sweetness.

In a large bowl, beat the butter on medium speed until creamy. This usually takes about two minutes. Change the mixer setting to low and add the confectioners’ sugar, milk, vanilla extract, and salt and beat for two minutes. You can add more confectioners’ sugar if it’s too thin or more milk/cream if it’s too thick. I like my icing to be thick because, like I said, I like it a little crispy, so I use more confectioners’ sugar.

This recipe is quick, easy, and delicious! As a bonus, it can be refrigerated for a couple of weeks, so you can use the leftovers for cookie dipping or making a cookie sandwich with the icing in the middle! Give it a try and let me know if you love it as much as I do.
