National Blueberry Muffin Day
Did you know that July 11 is also known as National Blueberry Muffin Day? It hasn’t exactly been determined when this national day began, but Americans have been celebrating it for quite some time. Blueberry muffins are known to be one of the most popular flavors of muffins.
While I personally prefer banana bread muffins, I don’t mind the blueberry ones that come from the bakery that are oversized with a sugary topping. The best is when you cut one in half while still warm and spread butter over it!
If you want to celebrate the national day and make a sweet treat, the following is a recipe I found online that is sure to turn out like delicious bakery muffins!
Ingredients you need for the muffins:
- 1.5 cups all-purpose flour
- 3/4 cup white sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup vegetable oil
- 1 large egg
- 1/3 cup milk
- 1 cup blueberries
Ingredients for the crumb topping:
- 1/2 cup white sugar
- 1/3 cup all-purpose flour
- 1/4 cup butter, cubed
- 1.5 teaspoons ground cinnamon
How to Prepare:
Preheat your oven to 400 degrees and grease 8 muffin cups, or line the tin with paper liners. Starting with preparing the muffins, in a large bowl whisk together the flour, sugar, baking powder, and salt. Pour the oil into a small liquid measuring cup, and add the egg and enough milk to reach the 1-cup mark. Stir these ingredients until combined and then pour it into the flour mixture and combine again. Next, you will fold in your blueberries, then set the batter to the side.
Now, to make the best part: the crumb topping! Combine the sugar, flour, butter, and cinnamon in a small bowl until crumbly. Set that aside for a moment. Get your bowl of batter and spoon it into the muffin cups, filling them right to the top. Once they are filled, sprinkle them with the crumb topping.
Place the muffins in your oven and bake for 20 to 25 minutes. The best way to tell if they are done is by sticking a toothpick in the center of the muffin and if it comes out clean, they are ready to take out!
