Meals and Memories
I am a foodie and tend to blog a lot about simple recipes that I enjoy eating. I say it that way because I’m rarely the one who actually makes the recipes! My husband does most of the cooking at our home. I’m perfectly capable of cooking, but I’ll never argue when he insists on doing it!
We have a fun weekend routine that we have been doing for a while now. One day, we will go out to eat and get the groceries we need for the upcoming week, and then the other day, we will come up with a delicious meal to make at home and hang out together with our two dogs. So basically, I help find new recipes to try, and my husband executes them easy enough! Last weekend, he whipped up a Mississippi pot roast on our smoker, and when it was done, he shredded it and put it on a toasted bun with cheese and horseradish sauce; it was to die for!
This weekend, I think he needs to try smoked queso. I’m currently seven months pregnant, and a constant craving of mine has been salted soft pretzels dipped in queso. I can’t get enough of them! Each time we go out to eat that is my go-to appetizer, and I even have a box of frozen ones at home. But I think it’s time we try to make our own queso. The following recipe for Smoked Queso Dip is on deck to try!
What You Need:
- 2 lb. Velveeta cheese, cubed
- 2 lb. of sausage, browned
- 1 (8 oz.) bag of shredded Mexican cheese blend
- 2 (10 oz.) cans diced tomatoes and green chiles, undrained
- 1 cup pickled jalapeno slices
- 2 tbsp minced garlic
- 2 tbsp minced onion flakes
- 1/2 cup milk
How to Prepare:
Throwing this recipe together is easy. You are going to dump all the ingredients listed above into a disposable aluminum pan. We will be using our smoker to make this queso dip, but you can also use your oven or even a crockpot. But we will place the pan on the smoker and let it go for about 30-45 minutes, stirring periodically until it’s all melted together. You can also add additional milk to the queso until you reach the consistency that you like!
As I mentioned before, I will definitely have my soft pretzels ready to go to dip into this smoked queso, along with tortilla chips. This will be a simple and delicious dip to try while we relax and watch football this weekend!
